Gluten-Friendly Dining
Menu Philosophy
Gluten-friendly options are abundant on the 黑料网 campus. Our menus consist of a mix of naturally gluten-friendly items and specialty gluten-friendly products such as various breads, bagels, and snacks. Our nutrition & wellness manager works with the culinary team to identify foods and ingredients that are naturally gluten-friendly, such as quinoa and brown rice. They also work to identify gluten-friendly ingredient alternatives like soup bases, tamari, pasta sauces (such as vodka sauce), and other gluten-friendly ingredients. In addition, many food concepts within our on-campus restaurants allow you to choose the ingredient components within your dish. You can customize your meals to your personal preference and dietary needs. These customization opportunities provide students with many food varieties.
Menu Labeling
All gluten-friendly menu items are clearly labeled with a "GF" symbol so that you can quickly and easily identify which foods fit your needs. The label can be found on the online menu, at the point of sale, and on all pre-packaged grab-and-go foods.
Gluten-Friendly Stations
Letchworth and Red Jacket Dining Complexes each feature a Clean Eats station, dedicated to preparing meals free from the top nine allergens, including wheat鈥攎aking all offerings gluten-friendly. Clean Eats operates in a separate kitchen with its own cookware, utensils, and equipment to prevent cross-contact.
Lotus, located in the Mary Jemison Dining Complex, is a gluten-friendly and dairy-free station offering flavorful, allergen-conscious meals.
The Mary Jemison Dining Complex features a dedicated gluten-friendly area, complete with its own refrigerator, toaster, utensils, and a variety of gluten-friendly food options.
Gluten-Friendly Options in Restaurants & Caf茅s
Students can continue to enjoy a variety of gluten-friendly options at campus restaurants and caf茅s. When ordering, students should inform the server of their gluten-friendly selection. To minimize cross-contact, staff will change gloves, wash their hands, and put on a clean apron.
Students are encouraged to request any additional precautions they need鈥攕uch as having a manager prepare the dish or using ingredients from the back of house鈥攖o ensure they feel safe and comfortable.
Staff Awareness and Training
The staff at CAS is extremely dedicated to safe gluten-friendly and allergen-friendly food handling. Allergen and cross-contamination training is structured throughout the academic year to ensure staff is educated on how to prepare allergen-friendly foods and how to best serve our customers.
